We are on the search for an enthusiastic, passionate, and dynamic individual to join us at Sonas Hotel Collection as Restaurant & Bar Manager at Duisdale House Hotel on the gorgeous Isle Of Skye.

About the role:

As the Restaurant and Bar Manager, you will work closely with the Operations Manager ensuring we deliver a dining experience of the highest calibre to our guests. You are responsible for the day to day running of the restaurant and bar, with line management responsibility for department and your team. Alongside the Operations Manager, you will also work closely with all other hotel departments and central support functions to ensure the overall success of the business.

Given the remote location of this role, we do offer staff accommodation for those who require it – rates to be discussed during the interview process. Our newly refurbished staff accommodation also includes staff meals. The Isle of Skye offers a unique change of pace and this role is ideal for those who want a change of scene and the opportunity to enjoy and explore one of Scotland’s most idyllic landscapes. A snapshot of your key responsibilities:

  • Lead the restaurant and bar operations within the business ensuring the overall success of your department.

  • Managing departmental financials including but not limited to, payroll, stock control and cost of sales.

  • Accountability for P&L control within your department.

  • Implement cost controls and report on departmental KPI’s.

  • Ensure that revenue/profit budgets/targets are achieved.

  • Recruitment & retention of your team.

  • Champion colleague training and provide coaching to your team.

  • Promote a positive people culture through effective communication and regular team meetings.

  • Ensuring adherence to all current legislation including but not limited to Health & Safety, Food Safety and Employment Law.

  • Liaising with the commercial team to drive sales within the department including marketing activities, promotions, private dining sales and any key campaign days.

  • Effective execution of any booked guest functions.

  • Create, implement & maintain operational policies and procedures, working with the Operations Manager.

Key requirements for this role:

  • Previous experience in a similar role (1 year’s minimum experience preferred).

  • A passion for hospitality and delivering an excellent guest experience.

  • The ability to champion, coach and support colleague training and development.

  • Managing budgets, an understanding of P&L and cost control.

  • Fantastic communication skills.
